Fresh Summer Taste

Our Harvest Home Farmers Markets are bursting with the sweet taste of summer. Delicious juicy red tomatoes, corn and sweet peaches has arrived. All freshly picked from a family owned farm in the Hudson valley, dripping with flavor. They are powerhouses for the healthy nutrition you need, especially in the hot weather.

Eat them raw. Eat them as a snack. Make tasty salsa and salads. Toss them into anything you cook.

  • Tomatoes help lower cholesterol so they are good for your heart. Rich in vitamin C to protect your immune system are good for your eyes and help prevent skin wrinkles.

  • Corn is full of antioxidants that clean your body. Good for the eyes. Just watch the butter, try using a bit of olive oil for your corn on the cob instead. Fun fact: An ear of corn has about the same calories as an apple.

  • Peaches have 10 vitamins, like vitamin A for better vision, vitamin C for your immune system and lots of B vitamins to help your food give you energy.

All of these summer treats are high in fiber for better digestion and low in calories to help keep those extra pounds off, and what a way to get some extra fluid on hot, sticky days.

Have Fun: Make your favorite salsa and use it as a dressing over greens. Try peaches and almonds with a dash of cinnamon.

Indulge yourself. Eat for the pleasure of taste and get healthier at the same time. Just remember you may need to keep a paper towel handy.

TASTE OF SUMMER 2021

RECIPE: Peach Tomato Salsa

INGREDIENTS:

  • 3 tomatoes, chopped

  • 3 tomatillos with paper-like husk removed, chopped

  • 1/2 unpeeled cucumber, cubed

  • 1 cup fresh corn kernels (about 2 ears of corn)

  • 2 peaches, chopped

  • 1 small red onion, chopped

  • 2 tablespoon lime juice or apple cider vinegar

  • 1/2 cup cilantro, chopped (or your favorite herb; mint, parsley)

  • 1 small jalapeno pepper, chopped (optional)

  • Salt and pepper to taste

PREPARATION:

  • Add all chopped vegetables and fruit to a large bowl. Add lime juice and mix well.

  • Mix in fresh cilantro (or favorite herb) salt and pepper to taste.

  • Serve immediately or keep refrigerated.

Tip: Get creative, you can add any of your favorite fruits like; strawberry's, mangos or apples.

TIPS: Storage and Cooking

  • Tomatoes and Peaches: Ripen quickly on your counter. They taste better without being refrigerated. Purchase a few that are a little hard and in 4-5 days they’ll be just ripe for eating.

  • Fresh corn: Best eaten a day or two after you buy it. Store cobs in the fridge to keep the sweetness.

COOKING TRICKS:

  • Quick Corn on the Cob. If you have a microwave, skip all that boiling water. Cut off both ends of the cob. Microwave for 4-5 minutes. Remove and let cool a bit: VERY HOT. Slide off the husk (leaves) . Ready to serve

SAVING FOR WINTER: A little extra food each week.

  • CORN: Cook an extra ear of corn. Run it immediately under cold water to cool. Cut kernels off the cob. Store in zip-lock bag in freezer.

  • PEACHES: Peel and slice. Sprinkle with 1 tablespoon of lemon juice. Place in single layer on baking sheet. Freeze over night. Place in zip-lock bag.

  • PEPPERS: No cooking needed. Remove seeds, cut in strips and freeze in zip-lock bag.
